Spiralized Cucumber Salad

This salad is a yummy mix of textures, with creamy avocado, crisp and juicy cucumber, and crunchy pepitas. 

It's filled with healthy fats and Vitamin A for smooth skin, B vitamins which are great for stress management, and Omega-3s for brain support.

Spiralized cucumber salad (serves 1)-

Ingredients:

1/2 large English cucumber

1/2 medium sized, somewhat firm avocado (not too mushy, not too hard)

2 Tbsp. raw pepitas

2 Tbsp. soy sauce or liquid aminos (or more to taste)

1 tsp. rice vinegar

dash of each: cayenne pepper, salt, and chili powder

Spiralize the cucumber and discard the core. Place in a bowl. Next, peel the avocado half and place flat side down on a cutting board. Slice very thinly along the width (2-3 mm slices), fan out slices into a straight line, curl the line into a spiral until a "rose" starts to shape. (

to a thorough how-to). Place atop the spiralized cucumber. Top with soy sauce, rice vinegar, pepitas and spices. Enjoy!

For the canape pictured here, just spread some hummus on toast and top with olive oil, sliced pear, and paprika.
